Stuffed Zucchini

Ingredients for the stuffing :

2 cups of short-grain rice

1 small onion

1 large tomato

1/2 cup coriander leaves

4 garlic cloves

1 tsp allspice

1 1/2 tsp salt (adjust to your preference)

1 tsp turmeric powder

3 tbsp olive oil

 

Start by washing the rice then let it soak for at least half an hour.

Meanwhile cut the top of the zucchinis and hollow them to make room for the stuffing.

Drain the rice from the water and add the rest of the stuffing ingredients to the rice bowl.

Finely chop all the ingredients and mix well. Stuff the zucchinis with the rice mixture and place them in a deep saucepan.

In another bowl, mix the sauce ingredients :

1 tbsp tomato paste

2 tbsp tamarind paste

1 tsp allspice

1 tsp salt

1 tsp minced garlic

2 tbsp olive oil

1 tbsp lemon juice

3 cups of water ( add more water if needed to cover all zucchinis in the pan)

After mixing all the sauce ingredients, pour the mixture on the stuffed zucchinis in the pan. Let the mixture reach a boil then let it simmer on a medium-low heat for about an hour. The sauce will reduce, and the stuffed zucchinis should be somewhat soft and easy to cut with a spoon.
